Ingredients:
 
30g (1.00 cup) Spinach
 
125g (1.00 cup) Radish
 
5 tsp Olive Oil
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
125g (1.00 cup) Cherry Tomatoes
 
100g Salmon Fillet
 
1 pinch Dried Basil
 
1 tbsp Lemon Juice

Instructions:

Season the salmon with a pinch of salt and ground black pepper

Heat the olive oil in a frying pan over medium heat

Add salmon fillet and fry until fish nicely browned, for 3-4 min on each side (cooking time depends on the thickness of salmon)

Test the fish for doneness by poking the thickest part with a chopstick or fork, the fish should flake

If not, fry for 1-2 min more, or until the fish just flakes

On a plate assemble the spinach, halved cherry tomatoes, sliced radishes, and fried sliced salmon

Season with dried basil, drizzle with lemon juice and enjoy!
