190g Tofu
 
2 tbsp Sunflower Oil
 
1 tbsp Soy Sauce
 
1 pinch Ground Black Pepper
 
1 pinch Salt
 
30g Mixed Leaf Salad
 
50g Courgette (Zucchini)
 
50g Tomatoes

Instructions:

In a small bowl, mix together soy sauce, half the amount of sunflower oil, salt, and ground black pepper

Set aside

Heat the remaining sunflower oil in a frying pan over medium heat

Add tofu cubes and cook on each side for 2 min or until golden brown and crispy

4.

Serve the fried tofu in a bowl with courgette, mixed salad leaves, and cucumber

Drizzle with the dressing
