Ingredients:
 
2 tbsp Olive Oil
 
175g Tomatoes
 
1 clove Garlic Cloves
 
225g Tofu
 
1 pinch Ground Cinnamon
 
1 pinch Ground Ginger
 
1 pinch Ground Coriander (Ground Cilantro)
 
1 pinch Curry Powder
 
2 tsp Parsley
 
80ml Water

Instructions:
1.

In a blender combine canned tomatoes, water, garlic, ground cinnamon, ground ginger, coriander, and curry powder

Blend until smooth and set aside

Drain off the excess liquid of tofu and slice into small cubes

Heat olive oil in a medium saucepan over medium heat

Add tofu and cook until brown

Then pour the tomato mixture and simmer for 5-7 min

Sprinkle with parsley and serve in a bowl
