1 pinch Ground Black Pepper
 
175g Courgette (Zucchini)
 
2 pinches Mixed Herbs
 
1 tsp Olive Oil
 
2 Egg(s)
 
25g Parmesan Cheese
 
15g Cheddar Cheese
 
15g Mozzarella Cheese

Instructions:
1.

Place the grated courgette and salt into a colander and mix together

Drain over the sink for 10 min

Wrap the courgette in a kitchen towel

Squeeze and twist over the sink to drain as much water as possible

Heat the oil in a heavy non-stick frittata pan

Add the courgette pieces and season with mixed herbs, salt, and ground black pepper

Cook over high heat, turning often until the courgette is nicely browned on all sides, about 9 min

Beat the eggs and measure out the three types of cheese while the courgette cooks

Reduce heat to low, sprinkle the cheeses over the courgette, and let it start to melt for a minute or two

Then add the beaten eggs, and stir gently with a rubber scraper

Cover the pan, and cook on low heat for about 15 min
