2 pinches Salt
 
1 pinch Curry Powder
 
1 pinch Ground Black Pepper
 
1 pinch Red Pepper Flakes
 
80g Aubergine (Eggplant)
 
1 tbsp Olive Oil
 
0.5 tbsp Parsley

Instructions:
1.

Preheat an oven to 400°F/200°C

Heat half the amount of olive oil in a nonstick frying pan over medium heat

Add ground beef to the frying pan

Season with a pinch of salt, ground black pepper, red pepper flakes (optional), and curry powder

Fry until cooked through and browned, stirring and breaking the ground beef with a spatula while cooking

Cut the aubergine in half and scoop out some pulp from each halve

Then, add the prepared ground beef to the aubergine halves

In a bowl, combine tomato paste with water

Mix well

5.

Place the stuffed aubergine halves in a baking dish

Drizzle with the remaining olive oil

Sprinkle with a pinch of salt and pour the tomato paste and water mixture over the aubergine

Bake in the oven for about 20-25 min or until the aubergine becomes tender

Garnish with chopped parsley
