Ingredients:
 
22ml Olive Oil
 
50g Courgette (Zucchini)
 
175g Mozzarella Cheese
 
1 pinch Salt
 
1 clove Garlic Cloves
 
70g Cherry Tomatoes

Instructions:

Preheat the oven to 350°F/175°C

Line a baking sheet with parchment paper

In a small bowl, mix 1 tbsp of olive oil, garlic, and salt

Set aside

Trim the ends off courgette and cut courgette in half lengthwise

Scoop out pulp, leaving 0

5 in/1 cm shells

Finely chop the courgette pulp

Heat the remaining olive oil in a frying pan over medium heat

Add courgette pulp and cook for 4-6 min

Remove from the heat

Brush olive oil mixture onto courgette halves

Fill the courgette halves with cooked courgette pulp, cherry tomatoes, and top each courgette half with mozzarella cheese

7.

Place the courgette halves on a baking sheet and bake for 10-15 min until the cheese has browned
