50g Tomatoes
 
60g Courgette (Zucchini)
 
1 handful Spinach
 
1 tbsp Olive Oil
 
4 Egg(s)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Parsley
 
45g Cheddar Cheese

Instructions:

Whisk eggs until smooth and slightly frothy

Add in half of the cheddar cheese, salt, ground black pepper, and blend together

Heat olive oil in a frying pan over medium-high heat

Pour in the egg mixture and let it sit for a few minutes

Lower the heat and continue to cook until the egg mixture is almost cooked through

Add in spinach and fold the omelette, sprinkle with parsley, and the remaining cheddar cheese

Serve with courgette and tomato
