50g Bell Peppers
 
100g Spinach
 
2 tbsp Water
 
15g Butter
 
3 Egg(s)
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
50g Blue Cheese

Instructions:

In a bowl beat eggs, water, a pinch of salt, and a pinch of ground black pepper

Set aside

Melt half of the butter in a frying pan over medium heat

Add capsicum and cook for 5 min

Add spinach, a pinch of salt, and a pinch of ground black pepper

Stir and cook for 2 min

Transfer cooked vegetables into a separate bowl

In the same frying pan melt the remaining butter over medium heat and add the egg mixture

When eggs start to set around the edges, using a rubber spatula or wooden spoon start to pull them from the side to the centre so the uncooked eggs will cook too

Repeat this until the omelette is almost cooked, but a layer of unset egg is visible on top

Add vegetables and blue cheese over half of the omelette

With a spatula fold unfilled half over the filling

Serve the omelette on a plate and enjoy!
