Spicy Salmon and Cauliflower Rice Bowl

Ingredients:
 
2 tsp Soy Sauce
 
1 pinch Ground Black Pepper
 
0.5 tbsp Hot Sauce
 
3 tbsp Mayonnaise
 
1 tsp Chilli Paste
 
1 pinch Salt
 
85g Salmon Fillet
 
110g Cauliflower
 
1g Ginger
 
0.5 tbsp Olive Oil
 
2 tbsp Dill
 
0.5 tbsp Lime Juice

Instructions:
1.

Place chopped cauliflower in a food processor and pulse until the mixture resembles rice

Heat half of the olive oil in a pan over medium heat

Add cauliflower rice and stir-fry for 2-3 min, until cooked through

Season with a pinch of salt and ground black pepper and transfer to a bowl

Heat the remaining olive oil in the pan over medium heat

Add salmon fillet and fry for 3-4 min on each side

Salmon is done when it flakes easily with a fork

Slice the salmon into bite-size pieces

Mix the salmon, hot sauce, soy sauce, and ginger together in a bowl, and place the saucy salmon over the cauliflower rice

Whisk together the mayo and chilli paste and drizzle the spicy mayo over everything

Garnish with dill and drizzle lemon juice on top
