1 tbsp Olive Oil
 
55g Beef Sausage
 
2 Egg(s)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tsp Parsley
 
50g Cucumber

Instructions:
1.

Heat 1/2 tbsp of olive oil in a frying pan over medium heat

Add beef sausage and fry for 7-10 min until brown and cooked through

Remove from the pan and set aside

Meanwhile, in a bowl, whisk eggs with salt and ground black pepper

In the same pan, heat the remaining olive oil over medium heat

Pour the egg mixture and let it sit, without stirring, for 20 sec

Stir with a wooden spoon, lifting and folding it over from the bottom of the pan

Remove from the pan when slightly runny

7.

Serve scrambled eggs on a plate with beef sausage and sliced cucumber on the side

Sprinkle with chopped parsley
