Ingredients:
 
2 pinches Ground Black Pepper
 
115g Broccoli
 
2 tbsp Cheddar Cheese
 
1.5 tbsp Butter
 
1 tbsp Lemon Juice
 
70g Cherry Tomatoes
 
1 tbsp Mayonnaise
 
115g Salmon Fillet
 
2 pinches Salt
 
1 tbsp Parsley

Instructions:
1.

Preheat an oven to 400°F/200°C

In a small bowl mix together mayonnaise and lemon juice

Set aside for later

Cut the broccoli into smaller florets and let simmer in lightly salted water for 2 min

4.

Drain the broccoli and set it aside

5.

Place the drained broccoli in a baking dish

6.

Add a pinch of salt, a pinch of ground black pepper, and 1 tbsp of melted butter

Sprinkle cheddar cheese on top of the broccoli and bake in the oven for 10-15 min or until the cheese turns a golden colour

8.

In the meantime, season salmon with salt and ground black pepper

Heat the remaining butter in a frying pan over medium heat

10.

Add seasoned salmon to the pan and fry for 4-5 min on each side, until the salmon is nicely browned

Salmon is done when it flakes easily with a fork

Serve the salmon on a plate with cherry tomatoes and broccoli and cheese mixture

12.

Garnish with parsley and drizzle the lemon mayonnaise over the salmon
