Salmon with Vegetables and Dip

This dish is a perfect low-carb, high-fat meal that will leave you feeling satisfied and nourished. A beautiful salmon fillet is cooked to perfection and paired with a side of fresh and colourful vegetables, such as broccoli, courgette, and bell peppers. The vegetables are lightly seasoned to bring out their natural flavours and add a bit of spice. Ingredients:
 
1 clove Garlic Cloves
 
300g Courgette (Zucchini)
 
1 handful Rocket (Arugula)
 
1 tbsp Lemon Juice
 
60g Cherry Tomatoes
 
100g Salmon Fillet
 
22ml Olive Oil
 
15g Cream Cheese
 
2 pinches Salt
 
2 pinches Ground Black Pepper

Instructions:

Preheat an oven to 425°F/220°C

Line a baking sheet with baking paper

Place the salmon, skin side down, on one side of the baking sheet, and season with a pinch of salt and a pinch of ground black pepper

Add courgette to the other side of the baking sheet

Drizzle with half of the olive oil over salmon and courgette

Bake for about 12-15 min (cooking time depends on the thickness of the salmon) or until the salmon is cooked through, and the courgette is tender

Meanwhile, in a small bowl mix together the remaining olive oil, cream cheese, garlic, lemon juice, salt, and ground black pepper

Serve baked salmon and courgette on a plate with cherry tomatoes and arugula

Drizzle with the cream cheese dip
