The asparagus is roasted until tender and the cherry tomatoes are cooked until they burst in your mouth, creating a burst of savoury-sweetness with every bite. This dish is so easy to make and is ideal for a healthy, low-carb meal that's bursting with flavour and nutrition.

Ingredients:
 
10 spears Asparagus
 
2 tbsp Olive Oil
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Parsley
 
0.5 tbsp Lemon Juice
 
120g Cherry Tomatoes
 
110g Salmon Fillet

Instructions:

Preheat the oven to 200°C

Place asparagus, cherry tomatoes, and salmon on a baking sheet with parchment paper

Season with a pinch of salt and a pinch of ground black pepper

Drizzle with olive oil

Place the baking sheet into the oven

Cook salmon, asparagus, and cherry tomatoes for about 10-15 min

4.

Serve salmon and baked vegetables on a plate

Drizzle the salmon with lemon juice and garnish with fresh parsley
