60g Tomatoes
 
1 tbsp Butter
 
3 pinches Salt
 
3 pinches Ground Black Pepper
 
0.5 tbsp Lemon Juice
 
1g Lemon Zest
 
35ml Double Cream (Heavy Cream)
 
1.5 tbsp Cream Cheese
 
1 pinch Ground Nutmeg
 
115g Salmon Fillet
 
15g (0.50 cup) Mixed Leaf Salad
 
1 Egg Yolk(s)
 
1 pinch Dried Dill
 
20g (0.33 cup) Courgette (Zucchini)

Instructions:
1.

Chop the salmon into small cubes

Put in a food processor

Add the egg yolk, 35 grams of double cream, dried dill, salt, and ground black pepper to the food processor

Pulse until it is creamy

Roll the mixture into small balls

Heat the butter in a medium frying pan over medium-high heat

Fry salmon meatballs until golden brown on all sides

Lower the heat and cook a bit longer until they are thoroughly cooked, for about 5-7 min

Set aside

Put the remaining double cream and cream cheese in a frying pan and bring to the boil

Stir consistently

Lower heat once boiled, and let simmer for a few min

Then add the salt, ground black pepper, nutmeg, lemon juice, and lemon zest

Stir well

Serve the salmon meatballs with salad greens, sliced tomato, courgette, and lemon sauce
