Ingredients:
 
2.5 tbsp Olive Oil
 
1 pinch Ground Black Pepper
 
100g Cucumber
 
2 pinches Salt
 
1 clove Garlic Cloves
 
2 tsp Mint
 
100g (0.33 cup) Greek Yoghurt
 
160g Salmon Fillet

Instructions:

Preheat an oven to 200ºC

Season the salmon fillet with salt and ground black pepper

Place the salmon, skin side down, on a non-stick baking sheet

Bake until the salmon is cooked through, for about 12 to 15 min

Meanwhile, rinse the cucumber and grate it

No need to peel the cucumber because skin adds colour and texture to the sauce

Put the grated cucumber in a strainer and sprinkle salt on top

Mix well and let the liquid drain for 5 min

Then wrap the grated cucumber in a paper towel and squeeze out excess liquid

In a bowl, combine the grated cucumber, Greek yoghurt, olive oil, minced garlic, and chopped mint

Season the sauce with salt and ground black pepper to taste

Serve cooked salmon with tzatziki sauce on top
