Ingredients:
 
115g Cauliflower
 
10ml Olive Oil
 
1 tsp Butter
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Cream Cheese
 
90g Salmon Fillet
 
30g Cheddar Cheese
 
1 tbsp Parsley
 
1 tbsp Lemon Juice

Instructions:

Heat olive oil in a pan over medium heat

Add salmon and fry until nicely browned, for 4-5 min on each side (cooking time depends on the thickness of salmon)

Test the salmon for doneness by poking the thickest part with a chopstick or fork, the salmon should flake

If not, fry for 1-2 min more, or until the salmon just flakes

Meanwhile, place cauliflower in a steamer over boiling water and cook for 10 min or until soft

Remove from the heat and drain well

Put the cooked cauliflower in a food processor with cheddar cheese, cream cheese, lemon juice, and melted butter

Pulse until the consistency is smooth

Season with salt and ground black pepper

Serve the salmon on a plate with the cauliflower puree

Garnish with parsley
