1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Double Cream (Heavy Cream)
 
30g (0.33 cup) Broccoli
 
30g (0.33 cup) Mozzarella Cheese

Instructions:

Preheat the oven to 180°C

Chop the broccoli into small pieces

Place the broccoli into a greased pie dish with olive oil, sprinkle over half the cheese, and set aside

In a bowl, crack the eggs, then add double cream, salt, and ground black pepper

Whisk well to incorporate air into the egg mixture to make it light and fluffy

Pour the egg mixture over the broccoli and top with the remaining cheese

Bake for 30-35 min, until the mixture stays firm when jiggled
