25g Cherry Tomatoes
 
3.5 tbsp Cheddar Cheese
 
1 tbsp Butter
 
1 pinch Ground Black Pepper
 
1 pinch Salt
 
30g Bell Peppers
 
2 tsp Parsley
 
25g (0.33 cup) Broccoli

Instructions:

Heat half of the butter in a frying pan over medium-high heat

Add cherry tomatoes, bell pepper, and broccoli florets and cook for 3-5 min, stirring occasionally

Set aside

In a medium bowl, lightly whisk the egg/eggs with salt and ground black pepper

Heat the remaining butter in a frying pan over medium-high heat

Pour the egg mixture and swirl the pan ensuring a thin, round omelette is formed

Cover with a lid, and cook for about 3 min, until the omelette is finely cooked

Add cooked vegetables onto the omelette, and fold in half using the spatula

5.

Place the omelette on a plate, sprinkle with cheddar cheese, and top with chopped parsley
