1 tbsp Butter
 
2 Egg(s)
 
45g Courgette (Zucchini)
 
60g Cherry Tomatoes
 
1 tbsp Double Cream (Heavy Cream)
 
2 pinches Salt
 
2 pinches Black Pepper
 
25g Ham
 
1 tbsp Dill

Instructions:
1.

Beat together the eggs and double cream, then stir in the grated courgette and chopped ham

Season with salt and black pepper

Heat the butter in a non-stick frying pan

Pour the beaten egg mixture into the pan

Allow cooking a little on the bottom then gently pull the sides inwards with a spatula, letting more egg run outwards to fill the space inside the pan

Cook until just set

Fold over, and cook for a further minute until just done

Serve with cherry tomatoes and chopped fresh dill
