1.5 tbsp Olive Oil
 
60g Tomatoes
 
60g Spinach
 
2 pinches Salt
 
2 pinches Ground Black Pepper

Instructions:

Whisk the eggs with 3 tbsp of water until smooth and slightly frothy

Then, mix in half of the grated cheddar cheese, salt and ground black pepper

Add olive oil to a frying pan, and bring to medium-high heat

Pour in the egg mixture and let it sit for a few minutes

Lower the heat and continue to cook until the egg mixture almost cooks through

Add spinach on top

Fold the omelette, then sprinkle the omelette with the remaining cheddar cheese

Serve immediately with tomato on the side
