1 tbsp Double Cream (Heavy Cream)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
20g Bell Peppers
 
30g (0.33 cup) Broccoli
 
2 tbsp Cheddar Cheese

Instructions:

Heat the olive oil in a frying pan over medium heat

Add broccoli, bell pepper, and cook for about 5-7 min, until tender

Meanwhile, beat together the eggs and the double cream until smooth

Season with salt and ground black pepper

Once the broccoli and bell pepper is cooked, pour over the beaten egg mixture and sprinkle over the cheddar cheese
