Ingredients:
 
30g Smoked Salmon Fillet
 
1 handful Spinach
 
40g Asparagus
 
2 Egg(s)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
50g Cherry Tomatoes
 
1 tbsp Double Cream (Heavy Cream)
 
1 tbsp Olive Oil

Instructions:

In a bowl, whisk the eggs with double cream, salt, and ground black pepper

Heat half of the olive oil in a pan over medium-high heat

Add asparagus and fry for 2-3 minutes

Remove from the pan

In the same pan drizzle the rest of the olive oil and pour in the egg mixture

Let it sit for a few minutes

Lower the heat and continue to cook until the egg mixture cooks through

Fold the omelette in half and slide it onto the plate

Serve with asparagus, smoked salmon, spinach, and cherry tomatoes
