Ingredients:
 
20ml Olive Oil
 
50g Prawns (Shrimp)
 
1 Egg(s)
 
2 pinches Ground Black Pepper
 
10g Bell Peppers
 
2 pinches Salt

Instructions:

Season the prawns with a pinch of salt and a pinch of ground black pepper

Heat half of the olive oil in a frying pan over medium-high heat

Add the prawns to the pan in a single layer, fry for 2-3 min on each side

Set aside

Meanwhile, in a bowl, whisk together the egg/eggs, season with ground black pepper and salt

Heat the remaining olive oil in the same pan over medium heat

Pour in the egg mixture

Stir slowly for the first minute, then turn the heat down to low, cover with a lid and cook for 4 min letting the top almost set

Add the prawns and capsicum on top of the omelet

Carefully, fold the omelet in half and cook for an additional 2-3 min

Remove from heat and transfer to a plate
