80g Broccoli
 
40g Spinach
 
20g Green Peas
 
2 Egg(s)
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
2 tbsp Parsley
 
2 tbsp Double Cream (Heavy Cream)
 
1 pinch Dried Basil
 
20ml Olive Oil

Instructions:

In a bowl whisk the eggs with double cream, a pinch of salt, freshly ground black pepper, and dried basil

Heat the olive oil in a non-stick frying pan over medium heat

Add chopped courgette and green beans, and fry for about 3 min, stirring occasionally

Pour the egg mixture into the pan and cook for a minute

Add shredded cheddar cheese and sliced spinach into the pan and continue cooking until the eggs are set

Serve the omelet on a plate, sprinkle chopped parsley on top, season with a pinch of salt and freshly ground black pepper, and enjoy!
