50g Chorizo
 
1 tsp Olive Oil
 
90g Cherry Tomatoes
 
1 tbsp Parsley
 
1 tbsp Double Cream (Heavy Cream)

Instructions:
1.

Heat olive oil in a frying pan over medium heat

Add sliced chorizo and halved cherry tomatoes

Sauté for a couple of minutes

Meanwhile beat eggs with double cream, salt, and ground black pepper in a bowl

Pour the egg mixture over the sautéed chorizo and tomatoes

Reduce the heat to low, cover the pan with a lid and cook covered until the egg mixture is set
