30g (1.00 cup) Spinach
 
2 tsp Butter
 
2 Egg(s)
 
1 pinch Ground Black Pepper
 
2 tbsp Creme Fraiche
 
40g Asparagus
 
4.5 tbsp Parmesan Cheese
 
1 pinch Salt

Instructions:

Chop the asparagus and microwave on high for about 2 min or until tender-crisp

In a bowl, whisk eggs, creme fraiche, salt, and ground black pepper

In a nonstick frying pan, heat butter over medium-high heat

Pour in the egg mixture

When the eggs are set, top the omelette with parmesan cheese, spinach, and asparagus

Reduce heat to low and fry for a few minutes more or until the cheese melts
