100g Aubergine (Eggplant)
 
120g Cheddar Cheese
 
1 tbsp Olive Oil
 
1 pinch Black Pepper
 
25g Cherry Tomatoes
 
1 tbsp Basil
 
1 pinch Salt

Instructions:

Preheat the oven to 425°F/220°C

Line a baking sheet with parchment paper

Slice the aubergine and drizzle both sides with olive oil, season with salt and pepper

Arrange on a baking sheet and bake until browned and almost tender, 6-8 min

Then add chopped vine-ripened tomatoes, basil leaves, and cheddar cheese on each aubergine slice

Bake until the cheese melts, for about 3-5 min
