1 pinch Salt
 
80g Tomatoes
 
80g Courgette (Zucchini)
 
1 clove Garlic Cloves
 
165g Mackerel
 
1 pinch Ground Black Pepper
 
2 tbsp Lemon Juice
 
2 tbsp Olive Oil
 
2 tbsp Dill

Instructions:

Rinse mackerel fillet and pat dry

Place in a shallow dish

Whisk together half of the lemon juice and half of the olive oil with garlic, salt, and ground black pepper

Coat the mackerel fillet with the mixture

Cover the dish and leave to marinate for 15-20 min if desired

Heat a nonstick frying pan over medium-high heat

When hot, add the mackerel fillet skin side down and cook for 2-3 min on each side

Meanwhile, mix together courgette, tomato, dill with the rest of the olive oil and lemon juice
