Italian Chicken Caprese is a delicious, mouth-watering dish perfect for those following a ketogenic diet. It is a flavorful combination of perfectly seasoned chicken cutlets topped with slices of juicy tomatoes, creamy mozzarella cheese and drizzled with a tangy balsamic glaze. The chicken is cooked to perfection, juicy and tender, and paired with the sweet and savory flavors of the tomatoes and mozzarella cheese. Ingredients:
 
1 tbsp Olive Oil
 
1 tbsp Butter
 
80g Chicken Breast
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
1 tbsp Lemon Juice
 
4 leaves Basil
 
2 pinches Italian Seasoning
 
70g (0.66 cup) Mozzarella Cheese
 
90g Tomatoes

Instructions:
1.

Heat a large skillet to medium-high heat and add half of the olive oil

Season the chicken with Italian seasoning, salt and ground black pepper

Add the chicken to the hot skillet, making sure not to overcrowd the skillet

Cook chicken for about 4-5 min per side, or until cooked through

Transfer cooked chicken to a plate and top each piece with a slice of mozzarella cheese

Quickly cover the plate with foil and set it aside, allowing the cheese to melt

Heat the skillet to medium-low

Add the butter and halved tomatoes

Allow the tomatoes to blister, cooking for about 3-5 min

Turn off the heat and stir in the lemon juice and half of the fresh basil

6.

Add the cheesy chicken back into the hot skillet, top with blistered tomatoes, drizzle with the rest of the olive oil and top with remaining fresh basil before serving
