Ingredients:
 
1 Tomatoes
 
25g Bell Peppers
 
125g (0.50 cup) Aubergine (Eggplant)
 
0.5 tbsp Sunflower Seeds
 
0.5 tbsp Pumpkin Seeds
 
2 tbsp Canola Oil
 
1 handful Rocket (Arugula)
 
30g Courgette (Zucchini)
 
115g Turkey Breast
 
2 pinches Ground Black Pepper
 
1 pinch Ground Paprika
 
1 pinch Italian Seasoning

Instructions:
1.

Cut the turkey breast into smaller size slices

Season with ground paprika and a pinch of ground black pepper

Heat half the amount of canola oil in a nonstick frying pan over medium heat

Add turkey and cook for about 10 min until cooked through

Meanwhile, heat the rest of the canola oil in a grill pan over medium heat

Add bell pepper, courgette, aubergine, and tomato

Cook for about 6-8 min

Season with a pinch of ground black pepper and Italian seasoning

4.

Transfer grilled vegetables into a serving bowl together with cooked turkey slices

Add rocket leaves, pumpkin seeds, and sunflower seeds

Toss well

Serve and enjoy!
