Ingredients:
 
225g (1.00 cup) Tofu
 
1 pinch Ground Black Pepper
 
65g Courgette (Zucchini)
 
1 pinch Ground Cumin
 
1 pinch Ground Ginger
 
25g Bell Peppers
 
1 tbsp Parsley
 
60g Cherry Tomatoes
 
1.5 tbsp Olive Oil
 
1 tbsp Lemon Juice

Instructions:
1.

Drain the tofu and cut it into large cubes

To make the marinade, mix ground cumin, ground ginger, ground black pepper, lemon juice, and olive oil

Add the tofu to the marinade, mix gently, cover, and set aside

Slice the courgette and bell pepper into large pieces

5.

Arrange the tofu, cherry tomatoes, sliced courgette, and bell pepper onto the skewers, and brush with the remaining marinade

6.

Grill or barbecue the skewers for 10-15 min, turning regularly

7.

Serve tofu skewers on a plate and garnish with fresh parsley
