Ingredients:
 
4 tsp Olive Oil
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
0.5 tbsp Lemon Juice
 
35g Cherry Tomatoes
 
15g Celery
 
2 tbsp Feta Cheese
 
45g (0.33 cup) Courgette (Zucchini)
 
120g Salmon Fillet
 
2 leaves Basil

Instructions:
1.

In a small bowl, mix together lemon juice, olive oil, salt, and ground black pepper

Add salmon steak and toss to coat

Preheat the grill or a grill pan to medium-high heat

Place salmon steak and cook for 5-7 min on each side

Set aside

Place courgette slices on the same grill or grill pan and fry for a few minutes until nicely grilled

4.

Serve grilled salmon, courgette, feta cheese, cherry tomatoes, and chopped celery on a plate

Top with basil leaves and enjoy!
