Ingredients:
 
65g Celery
 
115g Feta Cheese
 
2 tbsp Olive Oil
 
2 pinches Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Lemon Juice
 
1 pinch Dried Oregano
 
50g Courgette (Zucchini)
 
60g Cherry Tomatoes
 
4 leaves Basil
 
170g Salmon Fillet

Instructions:

Heat half of the olive oil in a grill pan over medium heat

Add a salmon fillet to the pan

Season with a pinch of salt and a pinch of ground black pepper

Drizzle with half of the lemon juice

Fry for 4-5 min on each side or until the thickest part is flaky

Set the fish aside

Heat the remaining olive oil in the same grill pan, add Courgette slices, and season with a pinch of salt and dried oregano

Cook over medium-high heat for a couple of minutes until nicely golden on both sides

Set Courgette slices aside

Then, add cherry tomatoes and grill for a few minutes until tender

Arrange grilled salmon, sliced Celery, Courgette, and cherry tomatoes on a plate

Drizzle the rest of the lemon juice over vegetables

Add feta cheese

Garnish with fresh Basil leaves

Serve and enjoy!
