1.5 tbsp Double Cream (Heavy Cream)
 
1.5 tbsp Butter
 
50g (0.66 cup) Shiitake Mushrooms
 
15g (0.50 cup) Spinach
 
25g Cheddar Cheese

Instructions:

Preheat the oven to 180°C

In a bowl, whisk the eggs and add grated cheddar cheese, 36% fat double cream, a pinch of salt, and a pinch of ground black pepper

Set aside

Melt the butter in an oven-safe skillet over medium heat

Add chopped shiitake mushrooms, spinach and season with a pinch of salt and a pinch of ground black pepper

Pour the whisked eggs and cheddar cheese mixture into the skillet

Place the skillet in the oven and bake for about 15-20 min or until the eggs set
