0.5 tbsp Double Cream (Heavy Cream)
 
3 tbsp Water
 
2 tsp Butter
 
50g (0.50 cup) Spinach
 
30g Bell Peppers
 
35g (0.33 cup) Broccoli
 
25g Cheddar Cheese

Instructions:
1.

Preheat the oven to 180°C

Place chopped broccoli in a microwave-safe bowl and pour water into the bowl with broccoli

Microwave for about 1-2 min or until tender-crisp

In a bowl, whisk the eggs and add grated cheddar cheese, double cream, a pinch of salt, and a pinch of ground black pepper

Set aside

4.

Melt the butter in an oven-safe skillet over medium heat

Add prepared broccoli, spinach, chopped bell pepper, a pinch of salt, and a pinch of ground black pepper

5.

Pour whisked eggs and cheddar cheese mixture into the skillet with vegetables

6.

Place the skillet in the oven and bake for about 15-20 min or until the eggs set
