20g Asparagus
 
2 Egg(s)
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
2 tsp Double Cream (Heavy Cream)
 
2 tbsp Water
 
1 tbsp Butter
 
10g Bell Peppers
 
5 tbsp Parmesan Cheese

Instructions:
1.

Preheat an oven to 180°C

Place chopped asparagus in a microwave-safe bowl, pour the water over the asparagus and cover the bowl with a lid

Microwave for about 1-2 min or until tender-crisp

In a bowl, whisk the eggs, add parmesan cheese, double cream, salt, and ground black pepper

Set aside

4.

Melt butter in an oven-safe skillet over medium heat

Add chopped asparagus and capsicum, salt and ground black pepper

5.

Add the whisked egg and parmesan cheese mixture to the skillet with vegetables

6.

Place the skillet in the oven and bake for about 15-20 min or until the eggs set
