25g Mushrooms
 
150g Spinach
 
2 tbsp Olive Oil
 
2 Egg(s)
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 tbsp Parsley

Instructions:
1.

Heat the olive oil in a medium frying pan over medium heat

Add sliced mushrooms and spinach and stir-fry until cooked through

Crack the egg/eggs straight into the frying pan on top of the stir-fried vegetables, reduce the heat to medium-low

Cook until white is completely set and yolk begins to thicken but is not hard

Season with a pinch of salt and ground black pepper, sprinkle grated parmesan and chopped parsley on top
