2 tbsp Olive Oil
 
3 Egg(s)
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
2.5 tbsp Parsley
 
2 pinches Garlic Powder
 
2 pinches Dried Oregano
 
120g Courgette (Zucchini)

Instructions:

Heat 30 grams of the olive oil in a pan over medium heat

Crack the eggs straight into the pan and cook for about 2-3 min or until the desired doneness

Season with salt and ground black pepper

Remove from the pan

Season courgette slices with salt, ground black pepper, garlic powder, and dried oregano

Add the remaining olive oil into the same pan

Add courgette slices and cook for 1-2 min on each side or until golden

Serve fried eggs on a plate together with courgette slices
