Ingredients:
 
20g Bell Peppers
 
30g (1.00 cup) Spinach
 
45g (0.33 cup) Feta Cheese
 
2 tbsp Olive Oil
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
1 pinch Dried Oregano
 
100g Cherry Tomatoes
 
110g Chicken Breast
 
1 pinch Dried Basil
 
1 tbsp Lemon Juice

Instructions:

In a bowl combine half of the olive oil, a pinch of salt, ground black pepper, and dried oregano

Add chicken breast and toss well

Let it marinate for at least 10 min

Heat a nonstick frying pan over medium-high heat

Add chicken breast and fry for about 5-7 min (each side) or until cooked through and no pink inside

Serve sliced chicken on a plate with courgette, sliced tomatoes, bell pepper, and cubed feta cheese

Drizzle the remaining olive oil and lemon juice over the salad

Sprinkle with a pinch of salt, ground black pepper, and dried basil
