30g Parmesan Cheese
 
70g Tomatoes
 
30g Bell Peppers
 
25g Courgette (Zucchini)
 
4 leaves Basil
 
1 tbsp Canola Oil

Instructions:
1.

Heat the rapeseed oil in a medium frying pan over medium heat

Add chopped tomato, courgette, and bell pepper and stir-fry until cooked through

Crack the eggs straight into the frying pan on top of the stir-fried vegetables, reduce the heat to medium-low

Cook until white is completely set and yolk begins to thicken but is not hard

Season with a pinch of salt and ground black pepper, sprinkle grated parmesan, and top with basil leaves
