10ml Olive Oil
 
25g Bacon
 
2 Egg(s)
 
35g Cherry Tomatoes
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
1 handful Rocket (Arugula)
 
1 tbsp Parsley

Instructions:
1.

Fry the bacon slices in a pan on medium-high heat until crispy

Remove the crispy bacon from the pan and set it on paper towels to drain

Meanwhile, heat olive oil in a separate pan over medium heat

Crack the eggs straight into the pan and cook for about 3 mins, or until white is set

Flip and cook for 1 min more

Season with salt and freshly ground black pepper

Cut cherry tomatoes in half and serve on a plate with fried eggs, crispy bacon, and rocket leaves

Garnish with parsley and enjoy!
