2 tbsp Olive Oil
 
3 Egg(s)
 
2 pinches Salt
 
2 pinches Ground Black Pepper
 
60g Cherry Tomatoes
 
30g Bell Peppers
 
2 tbsp Parsley

Instructions:
1.

Heat half of the olive oil in a pan over medium heat

Add chopped bell pepper into the pan and stir-fry for 2-3 min until softened

Crack the eggs into the pan on top of the bell pepper

Fry for about 2-3 min or until the desired doneness

Season with salt and ground black pepper and remove from the heat

Serve fried eggs with cooked bell pepper and halved cherry tomatoes

Sprinkle chopped parsley on top and drizzle with remaining olive oil
