2 tsp Olive Oil
 
2 Egg(s)
 
75g Pork Sausage
 
70g Courgette (Zucchini)
 
1 tbsp Parsley

Instructions:

Boil the pork sausage according to the package instructions

In a mixing bowl, whisk the eggs with a fork

In a frying pan, heat the olive oil

Pour in the whisked eggs

Cover with a lid and let the eggs cook without flipping on low-medium heat

Once the omelet is cooked, top it with cheddar cheese and parsley

Cover with the lid and let the cheese melt

Remove the pan from the heat

In the centre, place the pork sausage

Let the omelet cool enough to handle

Lifting at one side, roll the egg wrap

The melted cheese will help to "seal" the edges

Serve with Courgette on the side
