Ingredients:
 
2 tbsp Olive Oil
 
60g Courgette (Zucchini)
 
30g (1.00 cup) Spinach
 
155g Tofu
 
1 tsp Sesame Seeds
 
50g Cherry Tomatoes
 
1 tbsp Soy Sauce
 
1 tbsp Nutritional Yeast Flakes

Instructions:
1.

Drain off the excess liquid of tofu and slice into small cubes

Into a medium bowl, add tofu cubes, soy sauce, and gently toss until evenly coated

Then add nutritional yeast and gently mix until coated

Heat olive oil in a medium non-stick frying pan over medium heat

Add tofu cubes and fry until crispy

4.

Into a serving bowl, add spinach, courgette, chopped cherry tomatoes, and tofu cubes

Sprinkle with sesame seeds
