40g (0.50 cup) Mushrooms
 
1 clove Garlic Cloves
 
3 tbsp Parmesan Cheese
 
1 tbsp Olive Oil
 
85g Chicken Breast
 
1 pinch Salt
 
1 pinch Ground Black Pepper
 
4 tbsp Double Cream (Heavy Cream)
 
40g Cherry Tomatoes
 
30g (1.00 cup) Lettuce

Instructions:
1.

Cut chicken into bite-sized pieces

Season the chicken with salt and ground black pepper

Heat half of the oil in a frying pan over medium-high heat

Add the chicken pieces and cook for 8-10 min or until golden brown and no longer pink inside

Remove from the pan and cover to keep warm

To the same pan, add the remaining oil, garlic, and mushrooms

Reduce the heat to medium-low, and saute until the garlic is fragrant and the mushrooms have released their liquid

Add double cream and parmesan cheese to the pan

Mix in and let simmer to thicken, for about 5 min

Add the chicken back to the pan and cook until it is heated through

6.

Serve creamy mushroom chicken on a plate with cos lettuce and cherry tomatoes
