3 tbsp Cream Cheese
 
100g Cauliflower
 
70g Chicken Breast
 
1 tbsp Olive Oil
 
1 pinch Ground Black Pepper

Instructions:

Preheat the oven to 375°F/190°C

Heat olive oil in a nonstick frying pan over medium heat

Add sliced chicken to the pan and cook for 8-10 min or until no longer pink inside

Meanwhile, bring a pot of lightly salted water to the boil and cook cauliflower florets until tender, for about 5-7 min

Drain

In a bowl, combine the chicken slices, cauliflower, ground black pepper, cream cheese, and half of the cheddar cheese

Place the mixture in an oven-safe dish and top with the remaining cheddar cheese

Cover loosely with foil and bake for 10 min

Remove the foil and bake for an additional 5 min or until the cheese is melted and bubbling
