Ingredients:
 
75g Mushrooms
 
10ml Olive Oil
 
1 pinch Ground Black Pepper
 
70g Courgette (Zucchini)
 
1 clove Garlic Cloves
 
75g Cheddar Cheese
 
1 pinch Salt
 
2 sprigs Parsley

Instructions:
1.

Preheat the oven to 375ºF/190ºC

Cut the courgette lengthwise and scoop out the inside of the courgette

Line courgette boat/boats on a baking sheet with parchment paper

Heat olive oil in a non-stick frying pan

Add garlic and cook for a few seconds

Add mushrooms, scooped-out chopped courgette, and saute, stirring occasionally, until the mushrooms release their liquid and the liquid cooks off, for about 7-8 min

Season the mixture with salt and ground black pepper

Spoon the mixture into the courgette boat/boats and sprinkle with Cheddar cheese

6.

Bake in the oven for 15-20 min or until the cheese is fully melted and bubbly

Serve garnished with parsley
