1 tbsp Olive Oil
 
100g Courgette (Zucchini)
 
80g Cheddar Cheese
 
80g Parmesan Cheese
 
1 pinch Salt
 
2 tbsp Dill

Instructions:
1.

Preheat the oven to 200ºC

Line a baking sheet with foil or parchment paper

Cut the courgette lengthwise

Use a spoon to scoop out some of the courgette flesh to make wells

Place the courgette onto the baking sheet, cut side up

Drizzle with olive oil and sprinkle with salt

Roast the courgette in the oven for about 15 min, until soft

Remove the courgette halves from the oven and stuff them with the parmesan and cheddar cheese

Garnish with chopped dill

Bake for about 5-10 min, until the cheese is melted and browned
