1 tsp Olive Oil
 
2 Egg(s)
 
2 pinches Salt
 
1 pinch Ground Black Pepper
 
80g Courgette (Zucchini)
 
1 tbsp Double Cream (Heavy Cream)
 
30g (0.25 cup) Cheddar Cheese

Instructions:
1.

Place the courgette in a colander and sprinkle with a pinch of salt

Thoroughly mix salt into courgette with hands and let sit for a few minutes

Preheat the oven to 350°F/175°C

Grease one portion-sized ovenproof baking dish with olive oil

With clean hands, squeeze out as much liquid from the courgette as possible

Place the courgette into a bowl

In a separate bowl, add eggs, double cream, a pinch of salt, and ground black pepper into a mixing bowl and beat until frothy

5.

Layer alternating cheddar cheese and courgette until used up

Gently pour the egg mixture over the quiche

Bake for about 20 min or until the quiche is browned and just slightly soft in the middle

Remove from the oven and let cool to room temperature before serving
