Ingredients:
 
3 tsp Sunflower Seeds
 
2 tbsp Olive Oil
 
30g (1.00 cup) Rocket (Arugula)
 
2 pinches Salt
 
1 pinch Ground Black Pepper
 
0.5 tbsp Lemon Juice
 
1 pinch Dried Oregano
 
1 pinch Dried Thyme
 
120g Courgette (Zucchini)
 
115g Chicken Breast
 
1 pinch Ground Paprika

Instructions:
1.

Cut the chicken breast into small pieces

Season with ground paprika, 2 pinches of salt, dried oregano, dried thyme, and 1 pinch of ground black pepper

To make the courgette noodles, cut the courgette with a vegetable peeler into thin slices lengthwise (or use a vegetable spiralizer)

In a pot with boiling water and 2 pinches of salt, add courgette noodles and cook for about 2-4 min

Set aside

Meanwhile, heat half the amount of olive oil in a nonstick frying pan over medium heat

Add chicken and cook for about 6-8 min or until cooked through

5.

On a plate, arrange prepared courgette noodles and rocket leaves

Add cooked chicken and sunflower seeds on top

Drizzle with the rest of the olive oil and lemon juice

Serve and enjoy!
